2 1/2 c. pretzels - ("shaped like sticks" crushed into very small pieces)
3 Tbsp. sugar
3/4 c. butter
1 (6 oz) pkg strawberry jello
1 10 oz. pkg. frozen strawberries or small container (or) 16 oz. sliced fresh strawberries
1 ( 8 oz ) pkg cream cheese
1 c. sugar
8 oz. cool whip
Combine crushed pretzels, sugar, and melted butter then press into a greased 9 x 13 pan. Bake @ 350 for 10 minutes. Cool.
Beat cream cheese and sugar until smooth. Blend in cool whip. Spread over cooled crust. Refrigerate.
Make jello according to directions and add the strawberries. Pour over cooked crust of pretzels that has been spread with cream cheese and is chilled. Put back in refrigerate until jello and strawberries are set.

Beef Stew - (I like to make this hearty stew Halloween Night!)
Karen Parker’s Stew - (I forgot to buy carrots!!)
I package of stew meat from Costco.
1 - lg. can stewed tomatoes.
1 - 8 oz can tomato sauce
8 potatoes (red rose – peel, cut in large chunks
4 carrots – large chunks
1 onion - large chunks
handful of fresh greenbeans
2 beef bullions
4 cups of water
Salt & pepper to taste
Pinch of thyme
Squirt of ketchup
(Use large crock pot.)
Flour meat and brown in nonstick skillet and olive oil. Set crock pot to low and put meat in crock pot with 4 cups of water, 2 beef bullions, stewed tomatoes and tomato sauce. Add a pinch of thyme. Cut up potatoes, carrots and onion and add to crock pot. Cook for about 3 hours stirring occasionally adding more fluid if needed.
Then Add salt and pepper to taste. (I used about 1 tsp. salt and ½ tsp. pepper but batches will vary.) Take about ¾ cup fluid from crook pot and mix with flour (about 4 tbsps… or more depending how thick you like your stew.) and stir back into stew to thicken. Add a squirt of ketchup. Cook for about 1 hour more, stirring occasionally. Karen said you can add frozen green beans or peas also when you add the veggies.

Fried Pot Roast Leftovers!!
Eggs and Zucchini Scramble!!

Linda & Susie LOVE this one!
Wash a young zucchini and grate it with a cheese grater (larger size). Then fry zucchini with butter until tender. (I use butter substitute called "Smart Balance"). Add two beaten eggs to frying pan with cooked zucchini and mix well till cooked. Salt and enjoy. Simple but very tasty. Call me crazy, but when I eat this it almost tastes like there is white cheese in it!

Julie Stephen's Cherry Jello

This is another wowser from Juile Stephens. She is amazing! Goes great with fresh baked yeast crescent rolls and baked ham.
Mix 3 cups boiling water and 6 oz. cherry jello into a 9x13 pan until dissolved. Immediately stir in 21 oz. can of Cherry pie filling. Refrigerate overnight until set.
Topping
Mix:
8 package cream cheese
1/2 cup sour cream
3/4 cup sugar
Spread topping over jello and serve. (cut into squares)

This is an amazing roll recipe from my good friend Julie Stephen. A must try recipe!

2 cups lukewarm water
1 cup butter - melted
1 cup sugar
6 eggs, beaten
1 1/2 tsp. salt
8-9 cups flour
Mix yeast with 2 Tbsp. sugar and 2 cups luke warm water. Add melted butter, sugar and eggs. Mix well. Stir in flour and salt. Add to other ingredients. Mix well and let rise 2 hours. Punch down and put in the refrigerator overnight. Devide into 2 to 3 balls. Roll each ball into a pizza round. Brush with melted butter. Cut with pizza cutter like pizza into 12 slices. Roll into crescent wide end first. Place on greased cookie sheet. Let rise 3 to 4 hours.
